There are four tastes involved in Thai food. They are called the four S’s. Salt, Sugar, Sour and Spice. All of these tastes are combined in one dish in Thai cooking and each in proportional amounts. Neo-Thai cooking (cooking in Thailand over the past 10 to 15 years) has carried the sugar ingredient to extremes and thus has diverted from Classical Thai cooking. The main reason for this, supposedly, is tourism. Americans and Europeans were said to have preferred more sugar in their food but Thai people, as well, have been consuming larger amounts of sugar and therefore are bearing the health consequences that come with it today.
At Thai Kitchen, we adhere to the Classical style of Thai cooking where the four S’s are blended proportionally into each dish and therefore providing a healthier alternative to Neo-Thai cooking.
Thai Kitchen also uses ingredients purchased fresh, daily and as many Asian ingredients that we can acquire. Thai Kitchen purchases most of these Asian ingredients locally but also as far as New Jersey, New York and Philadelphia. We attempt to make our dishes as authentic as possible and will not substitute for Asian ingredients as long as we can obtain them. We don’t “Americanize” our food but we will try to accommodate your needs, whether it be strictly vegetarian, low sodium, etc. You simply inform your server and we will prepare your meal accordingly.
